GDQuest has some demos that may be applicable here. I've found four looking through the list at https://www.gdquest.com/tools/: Godot 2D Builder (simulation demo), Godot 2D Rhythm Game, 2D Space Game (top-down space mining demo), Godot 2D Platformer, and Godot Open RPG. Looking through their github some of these appear to only be Godot 3 though.

We have a four strike system in this community where you get warned the first time you break a rule, then given a week ban, then given a year ban, then a permanent ban. Certain actions may bypass this and go straight to permanent ban if severe enough and done with malicious intent

There are not many because Godot continues to change version , so the creators who are employed in 3.0, 3.5 feel frustrated to pass for 4.0, and it will be the same for 4.5, 5.0. The continuous change does not allow to create stable guides with time.
godot-demo-projects is exactly the thing that I mentioned above. Demo of one specific engine function, as opposed to a collection of game mechanics.
I am aware of awesome-godot, and it is a good resource. But I have not checked it out recently. Apparently the section that you linked to has links to Godot <=3.2.
Maybe we could make some PRs with 4.x links as well.
There are plenty of Godot games out there that are source available. For example https://itch.io/games/tag-godot/tag-open-source
A lot of the games in the Godot Wild Jam also have their source available as that's kind of a community tradition.
Also, it's not super clear what you're after. You say these projects should be for 'newcomers' but then a multiplayer arena FPS with a bunch of different weapons is not complex enough? Believe me, if you're a beginner, that is enough to keep you occupied for the next couple of years. If you're a beginner, focusing on simple, specific functionality is exactly what you're after, rather than a complex mega project.
More (open/obvious) examples would be nice, but there's already plenty out there. Maybe check the Asset Store. The main problem is the lack of availability for all versions. GDQuest (as already mentioned somewhere here) has plenty of examples, tutorials and demos for lots of stuff.

Good news, Godot is free and open source and you can contribute! Not only, but it has many playable demos already in the asset store

Nice! It's a great start. Now that people are switching engines, they'll probably have a good amount of entries next year.
I think a revamp of the asset system would be nice, have a section for high quality community made and voted "default" scenes that replicate the Unreal demos.
Brotato is GODOT, idk if that helps but it is great.

OP seems to be looking for example game projects for godot (that you can open in godot and take a look at) not examples of games made with godot.
