You can set a default sorting for your lemmy feed in your profile settings, which will be persistent between desktop and the application.

I have been using NewComments for a while, but now that the lemmyverse is more active I'm giving Hot another go.

Whether or not you default your feed to Subscribed or Local depends on how many communities you've found, perhaps leaving it on local for a while will help you find new communities that you can build up your subscriptions.

these settings are for posts, right? I still need to manually select NEW within a thread for sorting comments by NEW

This was just for your homepage feed, I don't know if we have the ability to set default sorting of comments in a thread yet, only manual each post that I can see.

I usually go top day across all of the fediverse the first couple of times I open Lemmy, then either new subscribed or hot local for the rest of the day. And for comments I sort by top everywhere except the daily thread here which I do by new
