Hah! I love this!

I tried to get Bing to generate, "killing two birds with one stone" but it censored my request and said it won't do it 🤷

You just need to be more creative. How about describing the scene without actually mentioning anything violent.

two birds sitting on a tree branch. in the foreground there’s a hand holding a a stone and ready to throw it.

Although, I think it would be interesting to see if there’s a way to make it generate a high speed photo of the split second when all the most gruesome things happen. Basically like a bullet cutting through a tomato, but with two birds and a stone.

Cool. But it also makes us draw up the scene instead of letting AI do it's weird creativity.

Ooh ooh, I know the actual answer. When the cat is let out of the bag, you realize you didn't buy a pig. If you bought a pig sight unseen (pig in a poke), some unscrupulous people might instead put a cat in the bag.

Note that you can hide your idiom as follows, if you want to let people guess it:

I'm also linking to Wiktionary articles in the spoiler text, since sometimes idioms are something that non-native speakers don't know.

Bing gave me this for 'Going off like a frog in a sock'.

Edit: Also this one for 'Flat out like a lizard drinking'.
