I'm looking for something that "a child would find easy to learn", possibly a virtual keyboard with an obvious "start recording" button that does that, recording your keys on the selected Track, then allowing easy playback so you can listen to it.

There are zillions. Some for beats, some for melody, some specifically made to like emulated versions of retro hardware of the same purpose.

They all range the gamut. Bandlab is pretty popular. Digitron looks kinda simple. Flowtones looks dead simple.
