I'm just starting to figure things out and, even if I'm not strictly interested in the topic, I'd love to subscribe to a few of the more active communities just for the discussion.

At the top of the Lemmy window (or in the hamburger menu, if you're using Lemmy from your phone) just click "communities" and then select "all" sorting. It will show you all communities federated to your local instance, with it default-sorted by # of active users per month.

Protip, if there's multiple with the same topic, just subscribe to them all, you don't loose anything in doing so
