Delicious alliteration

I’ve been eating terribly lately, but I made an effort here. It actually turned out pretty great!

Salmon is chipotle & lime, with cilantro crema, peperoncini & scallion on top, seared in a cast iron pan with a little butter

Salad is field greens, fresh basil & oregano, cucumber, blue cheese, roasted beets, strawberries, almonds, and a bit of balsamic vinegar

They might not classically go together, idk, but they made me happy

Wait, you're telling me I can put cooked Salmon cuts on top of fruits and it works?!

I like to cook it ahead of time and serve the salmon cold. Kind of like a prepared lunch. I find that blueberries match the best.

Ha, try it and see! I like it, my spouse does not.

If you just immediately plunk it on there it can definitely steam the greens under it, but I let the fish rest 5mins on some folded paper towel first so it works good enough :)
