Knobs here have child protection, e.g. you need to hold the knob in a specific place to actually get a flame, and you need to push it in to be able to turn it away from the "off" position.
And if your kids are old enough to reach the top of the stove, you can teach them not to touch it because it's dangerous.
I don't think I can recall any accident here with a child touching those knobs. Maybe European children are just smarter, eh :P?
Gas knobs have the same safety features as you're describing in the US. The back-mounted knobs in OP's image are on an electric stove.
