Was thinking of some bacon and eggs with toasted mini bagels and chive cream cheese. What about you?

I do a thing I call a farmer's bowl. I pan fry potatoes with onions and green peppers then put them in the bottom of a bowl. I add crumbled bacon or sausage, cheddar cheese and green onion, then top everything with one or two fried eggs with soft yolks so that the yolk runs down into the potatoes.
This morning I had left over chicken parmigiana from Fratelli at Kanata Centrum in Ottawa.
I would gladly demolish this bowl. Might stick it in the air fryer to melt the cheese first, though.
Welp, imma make some chicken parm now. Deep frying is kinda a pain but it’s my favorite meal I make ever.
It makes a great breakfast. I like to shallow fry my chicken in a mixture of half butter and half vegetable oil then bake it in the oven.
