CalyxOS released a built too, seems like it as easy to flash like Pixels which is actually refreshing for Android Tablets

How Google-free can you make GrapheneOS? Like Lineage OS sans gapps? Better?
Completly, if you don't want google you don't install it, play store/play service/service framework are installable like regular apps. If you later find something that you need it for e.g. Netflix or banking app, you can make a new profile as to not contaminate your google free profile, even though its sandboxed.
I was wondering how many connections to Google servers GOS is making, and be it just for GPS ephemerides. You can configure DNS freely, too?

On self-hosting: You'd have to modify the source code and then build the OS yourself(which a lot of people do).

I really want an android tablet with lineageos support for watching movies and browsing the web. But I have been spoiled by my OLED TV so I think LCD just won't cut it. Also, I would ideally want a 120hz display so that movies can be played back without 3:2 pulldown. I don't believe such a device exists ATM?

You don't need 120 Hz. I also like the OLED on my Samsung Lineage OS tablet.
And it does judder free 24 fps playback on a 60hz screen?
Edit: also, what model is it? The Galaxy Tab S5e?
I have an S5e running lineage, happy to test anything. I can tell you now though that HDR playback is not possible. It'll just tonemap to SDR, and not particularly well.
That's very kind :) HDR would be nice but Jellyfin does a good job at tone mapping to SDR when transcoding so it's not a deal breaker. Can you actually tell the difference between judder-free and judder 24 fps playback? I think many people can't, but unfortunately I am one of the people who are annoyed by judder. If you can, which one is it on the S5e?
So when using this test video there is noticeable judder at 24fps. Playing back at 1.25x (30fps) is as smooth as you'd like. Performance is very similar to an S21 Ultra if that's a useful reference. Of course, this is a long horizontal panning shot, which I know to be the worst for judder. I'd bet my LG C1 would struggle with it.
When watching modern films, I find that these kind of shots occur less. I can't say I've really noticed judder whilst watching films on this device. Clearly it does happen, but it's not something that has bothered me personally. I would say I'm the kind of person to notice any inconsistency in presentation of video, be it judder, stutter, bad frame timing, micro-stutters in games, low bit rate etc... So make if that what you will.
If I were at home if film it for you, but there's very megre Internet where I currently am.
The screen is vibrant, bright enough and has OLED contrast.
Sound is OK, nothing to write home about, but it's on par for a device this size. If you go the Lineage route, I'd recommend using Flat Equalizer to raise the bass and some mids for a fuller sound more akin to the One UI tuning.
I use this for F1 (50fps), football, movies, TV, and YouTube and I really like it. For the Β£80 I spent, I'm delighted. Only get 5 or 6 hours SoT, which might be a downer, but it's an old used battery so what else do you expect?
I think you are underestimating your TV, as long as it detects that the content is 24 fps it should have no trouble playing it back judder free.
Other than that, I thought about it some more, and I think I'm fine with a bit of judder. On a big TV I find it really annoying but on a smaller screen I can probably see past it. Sound-wise I will mainly use my bluetooth iems so I don't really need good speakers. So now I am trying to get a tab s5e at a decent price, but weirdly most listings start at 200 Euros, which I don't think I'm willing to spend on an more than 4 year old device. Oh well, we will see how it goes.
