I'm sure it went more like:

"Boy I sure am hungry, but there's no food for a poor person like me to buy! I wonder if boiling the hooves of this horse would be tasty?"

"Well, not really tasty, but kinda gummy. And when it cooled it got hard and dried pretty clear and the stirrer stuck to whatever I placed it on! I wonder what else I can use this waste product for then?"

Eh, babies drink from tits. Calves drink from tits. Not a big logical leap to make for early man, especially after/during the domestication of milkable animals.

When you know what ancient people did with sinew, it's not that obtuse. We have used bones, cartilage and sinews of animals we killed for a really looooooong time. It comes as a natural thought when you see that when those parts are boiled they become sticky and then harden as they dry. Not a really hard logical leap to make. Just somewhat morbid.

We have been making animal glues for like... 200000 years. So yep. Any animal can be made a glue.
