Honestly it's so hard to switch from "throw into oven, put potatoes on the stove, come back in half a hour and a tasty dinner is done" to properly planning a meal with veggies.
And then there's the convenience of just buying a chunk of salami to gnaw on that is not represented (around here) by vegan products.
