It's not illegal in most of Europe. If you say it in most of Europe in polite company you'll get punched most likely, but you won't get arrested.

It's literally only Germany which have made it illegal for the fairly obvious reasons

It's not just Germany, it is17 countries. That's most of Europe.

The laws don't always say "it is illegal to deny the holocaust" ... but you have to look at the way libel laws are used. Britain actually convicts on counts of libel for holocaust denial (see historian David Irving). They have laws on incitement to hatred and offensive communication that are used should one post a story that mentions holocaust denial (see Allison Chabloz).

My point still stands. Seeing all those countries with laws like this could make a reasonable person suspicious.

Wow David Irving is a twat. Here's a poem he wrote for his infant daughter

I am a Baby Aryan
Not Jewish or Sectarian
I have no plans to marry an
Ape or Rastafarian.

...led him to openly espouse Holocaust denial, specifically denying that Jews were murdered by gassing at the Auschwitz concentration camp.

I don't get why there are people denying this when so much has been recorded and with the large amount of witness testimony

I am defending no one and taking no side. I'm just pointing out that there are laws against denying the holocaust all across Europe.

These laws are harsh and will actually hit researchers that even try and dispute the number of victims ... unless they are making the number larger. It is a fish tale. No doubt a fish was caught, but there is no way possible it was 11 million feet long.
