Its been this way for decades. They will ask for x impossible qualifications for the compensation they want to offer. One of three things will happen:

  1. No one applies, they alter the job posting or compensation
  2. No one applies, the posting gets reposted for years
  3. People apply and say fuck it. They get the job because there is no unicorn candidate

Moral of the story is apply if you really want the job, or move on. It's like running from a bear.

yeah but as someone entering the job market it's soul crushing to see all those listings. You think that you're the problem, that everyone else entering the field does have 3 years of experience already. It just fucking sucks, what's the point in inflating the requirements like that?
