I'm trying to understand the problem those apps bring as a whole.

When an app has access to everything that concerns your health, what is the biggest threat that it can pose?

Gadgetbridge is apparently going to support some of their devices in upcoming versions https://gadgetbridge.org/gadgets/wearables/garmin/

I don't use such apps so can't recommend anything. Ask someone who knows more about the topic
