there are plenty of linux systems on the ISS, but there are also lots of systems there where they would never consider using it. for some reasons why, see this recent post on "The Current Challenges With Using Linux On Airplanes"
Depends on who is using it. Astronauts? Super stable. Me? Better make sure there is a live CD handy.
