Oh boy, you're in for some fun!
If you have a soft spot for 1960s style campiness, go ahead and start with the original series. (That's where I did)
Otherwise, start with Star Trek: The Next Generation and just run with it.
Star Trek TNG after Riker grows a beard, so season 2.
My gf loved the beardless seasons as well, so I'd start from the beginning, only skip forward if you're not liking it.
There's a good episode in season one... I don't remember which one but there is one
There are probably guides, but just pick a random TNG episode, probably not from season 1 or 2.
