A dry stout is a normal version of the beer that doesn't have additives. While pastry stouts have added sugar or natural flavors put into it. An example being vanilla, mint, and even pumpkin spice.

Alot of the Pastry Stouts are made way too sweet and it ruins the unique flavors stouts have in my opinion. They can be good but dry stouts have a higher floor and and ceiling in my opinion.

I have tried to like stouts so many times but they all just taste awful to me. The only one I can tolerate is Guinness. I've always leaned more towards IPAs and sours. Though I like plenty of other kinds of beer as well.

They do have a bold flavor so it makes sense they aren't for everyone. Guinness has a pretty smooth and light body so maybe that's why you can tolerate it?
