So many niche subreddits that help me explore my hobbies. Sailing, pipe tobacco. I just got into tiki style drinks and discovered a whole sub-culture I was unaware of around this.
iOSgaming and gamingcirclejerk will be missed for me.

I already miss r/blankies, for followers of the Blank Check movie podcast. Did a search and nothing came up. After I lurk for a bit to get more of a feel for this Lemmyverse, I may start putting out feelers to try and find others. There must be dozens of us. Another podcast I love also had a great community over on the website which must not be named. "The Greatest Generation" was a great community, and I found it here, but there's nobody there, not yet anyway.
Its not the subreddits themselves I miss, its the centralized content. I don't want to have to scour 18 different communities from 4 different sites to get all my news and memes and videos. I liked having it all in one place and just being able to hit 'refresh' and have it all in front of me at once...
r/futurefunk, I met several songs there. Also r/citypop and r/VaporwaveAsthetics.
I'm really into mens fashion so all the clothing/ fashion subs and even subs for specific brands. I'm trying to start the Supreme community here on reddit since that's the one I'm most confident I could manage myself at the start. Hopefully with more people on lemmy they will naturally fill back in over time
Netsec, netsecstudents, horror, catastrophicfailures, illegallysmolcats (and the whole lot of cat subreddits) and so on, the list is really long.
One major area Lemmy seems to be lacking in is sport, the soccer lemmunity(?) is sparse and there isn't one for my favourite club yet :(
I liked r/whatisthis and the other subs for identifying objects and places. I rarely knew what anything was and never posted, but I learned a lot about random items!
I think I will miss r/peoplefuckingdying, had a few laughs with that one.

It was cool to see all the silly things people manage to do at that game! A great game too!
I miss being able look up any niche thing I was into at the time and find an active community discussing it and making memes.
